Perilla Leaf Pesto: A Perilla-Only Approach (깻잎 페스토)

This version of perilla leaf pesto (깻잎 페스토) is built on a simple idea:

everything comes from perilla (깻잎).

Instead of combining multiple herbs and nuts, the goal is to extract and layer the different qualities of perilla itself.

Concept

Perilla is used in multiple forms:

  • fresh perilla leaves (깻잎) for aroma
  • perilla oil (들기름) for richness
  • perilla seeds (들깨) for depth

Each element contributes a different texture and flavor, creating a pesto that is entirely centered around one ingredient.

Ingredients

  • fresh perilla leaves 20-30(깻잎)
  • perilla oil (들기름)
  • ground or crushed perilla seeds 1tb(들깨)

Optional

  • garlic (see note)
  • cashew nuts (or pine nuts)
  • a light splash of soy sauce (간장)
  • lemon juice

The ingredients can be adjusted freely depending on the desired texture, flavor, and aroma of the pesto.

Preparation

  1. Finely chop the perilla leaves.
  2. Lightly crush the perilla seeds to release their aroma.
  3. Combine with perilla oil and mix gently.
  4. Adjust with optional ingredients as needed.

The texture should remain slightly coarse rather than fully smooth.

A Note on Ingredients

Cashews are used here as a practical substitute for pine nuts.

While pine nuts offer a more traditional richness, cashews provide a similar texture and mild nuttiness at a more accessible cost.

A Note on Seasoning

Soy sauce and lemon juice are kept optional.

Acidity and saltiness are highly personal, and best adjusted to taste.

Soy sauce, unlike cheese in traditional pesto, is a liquid and can be added later without affecting the structure — simply mixed in as needed.

A Note on Garlic

Garlic is intentionally omitted in this version.

The pesto is designed to also function within the framework of temple-style cooking (정진요리), where strong aromatics such as garlic are traditionally avoided.

This allows the flavor of perilla (깻잎) to remain clean, focused, and unobstructed.

Flavor

This pesto is:

  • deeply nutty
  • aromatic
  • slightly bitter
  • rich but clean

Because all elements come from perilla, the flavor is focused and continuous.

How to Use

A Note on Simplicity

This approach is less about recreating classic pesto and more about exploring the full range of a single ingredient.

It is a way of letting perilla (깻잎) express itself fully — from leaf to oil to seed.
