Min-deulle muchim (민들레 무침) is a simple Korean dish made with seasoned dandelion greens.

It is one of the most direct ways to experience bitterness in Korean cooking.

Ingredients

  • dandelion greens (민들레)
  • gochujang (고추장)
  • scallion (파)
  • garlic (마늘)
  • vinegar
  • maesil cheong or honey(매실청)
  • sesame
  • sesame oil

Ingredients can be adjusted depending on taste.

Preparation

  1. Blanch the dandelion in lightly salted water
  2. Drain and cool
  3. Mix with all the seasoning

A Note on Bitterness

Dandelion has a natural bitterness.

This should not be removed completely.

Bitterness adds depth.

A Note on Balance

  • gochujang → body
  • vinegar → brightness
  • maesil → roundness

The goal is not to hide the bitterness, but to balance it.

Texture

  • soft leaves
  • slightly firm stems

It should feel light, not heavy.

A Note on Simplicity

This is not complicated cooking.

Just simple seasoning, handled well.
